Chef Gioacchino Pontrelli and Sommelier Chiara Viani
1 MICHELIN STAR
THREE-FORK GAMBERO ROSSO AWARD
FORTE DEI MARMI, TOSCANA
Recently recognized by Gambero Rosso in early 2012 with three distinguished stars, Chef Pontrelli will share his culinary passion for authentic Tuscan cuisine by demonstrating and preparing dishes from his kitchen at the renowned Michelin-starred Ristorante Lorenzo in Forte dei Marmi, Tuscany.
Owner Lorenzo Viani saw Gioacchino’s potential at an early age. After short assignments in Bagni, Florence, Fiesole, Naples, Capri, and Camaiore, Chef Pontrelli joined Ristorante Lorenzo as Chef de Cuisine in 1986 when he was only 18 years old. Over time, he perfected the right balance of tradition and innovation, designing dishes now known for their artistic blend of ingredients. Combine that with his clever plate presentation and Chef Pontrelli’s inimitable creations are harmonious, without overwhelming the natural flavors of his native Italy.
Ristorante Lorenzo is highly regarded for its seafood choices, not only in Tuscany, but throughout Italy as a result of Chef Pontrelli’s imagination, high quality raw materials and only the freshest fish selections, purchased twice daily from the local market. Lorenzo is often jokingly overheard remarking that “the fish has 24 virtues and every hour that passes, it loses one.”
Chiara grew up watching her father create a restaurant praised for its professionalism and hospitality. When Chiara finished her studies in Economics and Commerce, Lorenzo opened a wine shop with the hope that she would return to the family business and run it. Seeing his passion to create the ultimate dining experience for his customers, Chiara chose to leave her intended career in Business to work for her father instead. Like her father, she believes that guests who visit Ristorante Lorenzo should feel like they are “coming home.”
Chiara studied for her Sommelier credential at the Associazione Italiana Sommeliers (AIS) in Versilia and will present wines each night that she has carefully selected and paired with Chef Pontrelli’s menu.
