Master Chef Marcello Spadone is a contemporary Mediterranean chef who ties his Michelin-starred La Bandiera (est. 1977) menu to the traditions of Italy's central Abruzzo region. Many of his ingredients are sourced from seaside microclimates, and his recipes typically include fragrant herbs, citruses, berries, nuts, fresh-picked vegetables, artisanal vinegar, oils, and local pork, lamb or cod.
